Curdled Milk Recipe
This sour cream recipe is super simple with few ingredients! Depending on the region of Brazil you are in, you can know this sweet as carved dulce de leche, sour dulce de leche, ragweed, cachorrada or cachorrada dulce de leche. The candy can be prepared as a base recipe for other candy recipes and can also be served warm after preparation.

Ingredients for making curdled milk jam:
1 liter of whole milk
1 lemon
1 cup of crystal sugar
2 cinnamon sticks (optional)
6 blackheads (optional)
How to make Sweet curds:
Place a pan with the sugar over medium-low heat and let it melt until it turns caramel. If you want, you can also add cinnamon and cloves in this step to flavor your sour dulce de leche.
Tip: If you use bagged milk, the recipe yields more, because this milk contains more fat. The darker your caramel gets, the browner the curdled milk candy will be.
Add milk slowly. When you finish adding the milk, keep stirring to dissolve the caramel pieces.
Tip: If the caramel is too hot the milk will spill, so be careful with this step.
Then add the lemon juice, stir slightly and wait for the milk to come to a boil and curdle. At this point, lower the heat and cook for 20-30 minutes or until dry and lumps form, as in the photo.
Tip: You'll know the milk has curdled when the whey starts separating.
Leave your curd dulce de leche on the fire until it is the consistency of your choice (drier or with some syrup). Serve warm or chilled and let us know what you think in the comments. Enjoy your food!
